Looking For A Low Fat Pumpkin Bread Recipe?
Here is a great tasting, healthy, Low Fat Recipe for Pumpkin Bread.
The fall season is upon us once again, with Thanksgiving and the Holiday Season not far behind. I don't know about you, but when the weather turns cool and the leaves begin to fall, the first things I love to do is get out my sweaters and baking pans!
Think you can't have Pumpkin Bread because of the High Fat Content and Calories? I have tweaked some of the ingredients that go into the traditional Pumpkin Bread Recipe and have created a wonderful, great tasting, low fat healthy Pumpkin Bread for all my health minded readers. I have managed to keep the great flavor and texture of this seasonal favorite while leaving out all the fat laden calories. This Low Fat Pumpkin Bread is high in fiber, low in fat and high on taste!
Ingredients For Pumpkin Bread:
- 1 1/2 Cups of Organic Whole Wheat Flour
- 1 tsp Sea Salt
- 1/2 Cup Natural Brown Sugar
- 1 1/2 tsp Baking Soda
- 1 tsp Cinnamon
- 1/2 Ground Nutmeg
- 1 tsp Vanilla
- 1/2 tsp Ground Cloves
- 1 Cup Canned Pumpkin (I use Libby's 100% Pumpkin)
- 1/2 Cup of Non-Fat Plain Yogurt
- 1 Large Egg or Egg Substitute
- 1 tsp Olive Oil
- 1/2 Cup of Walnuts or Pecans (chopped)
- Preheat oven to 350 degrees
- Use Medium size loaf pans or small bunt pan.
- Spray pans with Non-stick baking spray.
Method:
- Mix all day ingredients together. Set aside a bowl. Beat together all wet ingredients including the sugar. Beat on medium speed until well blended.
- Mix dry ingredients slowly into wet mixture. Be careful not to over mix (bread will have a tough texture)
- Add Chopped nuts.
- Bake in 350 degree oven on center rack for 45 minutes (test the center to make sure that bread is thoroughly cooked in the center.)
Note: I usually double this recipe between 2 or 3 small to medium loaf pans. This Pumpkin Bread is a great gift too!
This recipe can be altered to make a Banana Bread by substituting the 1 cup of pumpkin for 2 large ripe bananas. Some Carob or dark chocolate chips can also be added to the Low Fat Banana Bread Recipe.
